West Coast Double IPA - 8%
An exploration of cutting edge IPA technology, this highly technical WC DIPA is DDH’d, loaded with YCH303 and fermented with thiolized Chico yeast. YCH303 is an experimental blend that combines the holy trinity of IPA hops - Mosaic, Citra, and Simcoe - in Cryo form with Phantasm, a product made from NZ white wine grape skins that’s loaded with thiol precursors. A massive whirlpool of YCH303 primes the wort with precursors which a special yeast strain biotransforms into highly aromatic thiols, creating ripe notes of passionfruit, candied grapefruit, and Sauv Marlborough wine. Two hits of dry hopping, one during fermentation and one after, maximize the tropical aromas and hop impact.
