Ripe, Tropical, Hazy IPA- 6.8%

This unique hazy IPA is focused on thiols - an extremely potent class of molecules, prized for their ripe, tropical flavors. Most thiols are bound in other molecules, rendering them flavorless. l Prized hops - like Mosaic and Nelson - are known for having high amounts of unbound thiols.

We brewed this hazy IPA with a yeast strain that is genetically modified to produce an enzyme which frees the bound thiols from hops and malt, giving the beer it’s extremely ripe, tropical aroma. Aromas of guava, passionfruit, lime, and peach leap from the glass. A massive whirlpool of Cascade (a hop with large amounts of bound thiols), provides plenty of precursors for the enzyme to work with. Mosaic, Citra, and Moteuka in an early dry hop take the tropical notes over the top.
