West Coast IPA collab w/ The Rare Barrel- 6.9%

We Have the Technology was brewed in collaboration with our pals at The Rare Barrel, just as they prepared to fire up their new brewhouse for the first time. This West Coast IPA highlights the classic citrusy character of Cascade, while simultaneously modernizing (enhancing) it with multiple Cascade derived hop concentrates and the unique, fruity terroir of New Zealand grown Cascade. 

Craft beer’s original darling hop is orangey and floral in flavor, and lends a crisp, structured mouthfeel. We loaded the kettle and whirlpool full of regular Cascade to get that mouthfeel and flavor, and added some Cascade hop oil to bump up the bitterness. Compared to the varieties we have today, Cascade has a lower oil content, and lacks some of the pungency we’ve come to expect in IPA. Cascade HopHash, which is concentrated lupulin glands knocked free during processing, and Cryo, which needs no introduction, bump that oil content up and push the flavor more into the grapefruit range. NZ Cascade in the dry hop adds a splash of fruity/herbal terroir. A dash of Citra deepens the fruit character and adds just a bit of ripeness to the aroma, while still letting those citrusy and floral Cascades shine. It finishes crisp and dry, and very well balanced.
