Mexican Lager with Purple Corn- 5%

Purple Corn is the star in this limited edition batch of our classic Temescal Especial Mexican Lager. Its aroma evokes a rich, earthy corn note, like the steam coming off a freshly opened tamale. A dash of Hallertau Mittelfrueh hops complement the corn with a touch of herbal and spicy flavors. The balanced finish keeps it crisp and drinkable.

Raw corn is not an easy ingredient to work with because it hasn’t been gelatinized - an important step that frees the starches so they can convert into sugars. We normally use flaked corn in Especial,which is gelatinized by the hot rollers that “flake” it, and can be added directly to the mash. We had to gelatinize the purple corn ourselves by boiling it separately, making something similar to grits, and adding that to the main mash. This process is called a “cereal mash” and is very common at macro breweries, but very uncommon at smaller craft breweries.
